Ok I received it and reproduced the issue. I'll have to investigate to understand why saving these images take so much time...

So in the end it appears that it was saving the images as PNG (lossless compression) that was taking so much time?!
So I decided to use JPG instead. It goes much faster and it reduces the size of the E57 file a lot. Hopefully the loss of quality won't be too harmful.
