I see in the manual that I can take the scaler field and apply it to the RGB value of the cloud. I however cant seem to find where this function is hidden. Instructions would be appreciated, thanks for your help.

Well, it's in "Edit > Scalar Fields > Convert to RGB". You have to select the point cloud first.
